Kale-Beet Salad


Half of 1 beet shredded

1 small bunch of lacinato (dinosaur) kale, chopped small

1 small bunch of curly leave kale, chopped small

2 mini cucumbers or 1 large cucumber diced

1/2 red onion minced (can use yellow but use 1/3)


juice from one lemon

3 TBS honey

1/2 cup olive oil

2 tsp italian seasoning

1 tsp garlic powder or 1-2 cloves of minced fresh garlic

1/2 tst onion powder

adobo to taste

in a small bowl combine all the ingredients for the salad dressing and whisk with a wire whisk. Set aside

Instructions for the Salad

in a large bowl add:

Chopped kale

shredded beets

minced onion

Diced cucumber

mix well and add dressing and toss. Serves 4-8 (4 if as a main meal and 8 if as a side dish)
